A few years ago, I started experiencing the kind of digestive issues that couldn’t be ignored. After way too many doctors and confusing tests, I was diagnosed with IBS and introduced to the low-FODMAP diet. Honestly? It felt impossible. Bland food. Complicated labels. Say goodbye to flavor?

No thanks.

But I’m an engineer — problem-solving is kind of my thing. I started testing recipes. Swapping ingredients. Reading science. Rebuilding meals from scratch. My kitchen became a lab — and my gut became the test subject.
